Ingredients

• 50 g NutriYummy Protein Pancake Mix Cookies & Cream or Protein Pancake Mix with Cocoa

• 90–100 ml water or milk (for a thinner, crêpe style batter)

• Pinch of salt & pepper

• ½ tsp oregano or Italian herbs (optional)

• 3–4 tbsp NutriYummy 0% Bolognese Sauce

• 60–80 g cooked chicken, turkey or plant based protein (in strips)

• 2 tbsp light shredded cheese or vegan cheese (optional)

• Some chopped rocket or lettuce

• Bowl, spatula or hand mixer, non stick pan


Flavour note:

• more neutral base → Cookies & Cream

• more “dark”, bold taste → Cocoa


Method

1. Add the 50 g of Pancake Mix to a bowl and season with salt, pepper and oregano.

2. Pour in 90–100 ml water or milk and mix for 20–30 seconds until you get a fairly thin batter.

3. Heat a non stick pan over medium heat.

4. Pour a small amount of batter and swirl the pan to create a thin wrap.

5. Cook for 1–2 minutes on the first side, flip and cook for another 1 minute. Repeat until the batter is used (2–3 wraps).

6. Warm the cooked chicken/turkey or plant protein.

7. Spread 1–2 tbsp 0% Bolognese Sauce in the centre of each wrap, add the protein, rocket/lettuce and cheese if using.

8. Roll up tightly or fold like a little parcel.


Tip

For meal prep, make 2 servings, wrap the rolls in parchment paper and keep in the fridge for up to 24 hours.
