Ingredients
• 50 g NutriYummy Protein Pancake Mix Cookies & Cream or with Cocoa
• 70–90 ml water or milk
• 1 egg white (optional, for more omelette like texture)
• 2–3 tbsp NutriYummy 0% Sweet Onion Sauce
• ½ small bell pepper, sliced
• 3–4 mushrooms, sliced
• Some spinach or lettuce
• Bowl, spatula or hand mixer, non stick pan
Method
1. In a bowl, mix the 50 g of Pancake Mix with the egg white (if using).
2. Add 70–90 ml water or milk and stir until you get a medium thick batter.
3. Heat a non stick pan over medium heat and cook 4 small pancakes, 1–2 minutes per side.
4. In the same pan, quickly sauté the mushrooms and pepper with a splash of water or non stick spray for 2–3 minutes.
5. Assemble the pockets: place one pancake on the plate, spread 1 tbsp 0% Sweet Onion Sauce, add mushrooms, pepper and spinach/lettuce, then top with a second pancake. Repeat for the second sandwich.
Tip
A great brunch option when you want something savoury and high protein instead of a classic omelette.
