Ingredients
• 50 g NutriYummy Protein Pancake Mix Cookies & Cream or with Cocoa
• 90–100 ml water or milk
• Pinch of salt
• 3–4 tbsp NutriYummy 0% Vinegret Sauce
• Salad mix: lettuce, cucumber, cherry tomatoes, carrot (finely chopped)
• 30–40 g cottage cheese or light feta (optional)
• Bowl, spatula or hand mixer, non stick pan
Method
1. Mix the 50 g of Pancake Mix with salt and add 90–100 ml water or milk to get a thin batter.
2. Heat a non stick pan over medium heat and cook 3 thin crêpes, 1–2 minutes per side.
3. In a bowl, toss the salad mix with 2 tbsp 0% Vinegret Sauce.
4. Lay each crêpe flat, place 2–3 tbsp of salad in the centre and add a little cheese if using.
5. Roll up and, if you like, cut into 2–3 bite size pieces.
6. Drizzle with 1–2 tbsp extra 0% Vinegret Sauce.
Tip
Light but satisfying – perfect for a quick office lunch or after a light workout.
Pairs perfectly with
Cookies & Cream (best with salad). Cocoa is for adventurous sweet and savory fans.
